It always amazes me that so few ingredients can make such a delicious dish. I found 4 wee Orkney dressed crabs in my fishmonger for £3! Add some fresh pasta, lemon, chilli and parsley and you’ve got an instant lunch or supper dish that’s as cheap as it is delicious!
Crab is a fab source of protein so if you are not a meat lover or fancy a fishy change it’s a great alternative and omega 3 fatty acids just add to the crabs long list health benefits. Some researchers have found that cultures that eat foods with high levels of omega 3 have lower levels of depression and it has a therapeutic value in bipolar disorder. I’m even more of a fan at discovering this.
This crab sensation is so quick and simple to make you will be a fan as soon as you’ve given it a first go. I come home from work exhausted sometimes and having had my cook on all day all I want is something quick, tasty and simple. The pasta only takes 5 minutes to boil so while you wait for it to cook you can assemble the other ingredients and then you are good to go.
Ingredients to serve 2
1 large dressed crab or 4 small dressed crabs
Allow 130g fresh pasta per person. 260g fresh Spaghetti.
1 large handful fresh flat leaved parsley
1 red, green or yellow chilli
1 clove fresh garlic crushed
splash of olive oil
Sea salt and ground black pepper
Bring a large pan of water to the boil and add a pinch of sea salt
Chop the chilli and add the crushed garlic to a frying pan with a splash of olive oil
Fry over a gentle heat until soft
Add the pasta to the boiling water and cook for 5 minutes until tender
Drain the pasta and add to the pan with the chilli and garlic
Stir in the crab meat, chopped parsley, squeeze the lemon juice into the pan and give it all a really good mix
Check the seasoning and add salt and pepper to taste
If you think the pasta needs to loosen up a bit add another splash of olive oil
